This is cod in its Sunday best. You’re getting the prime cuts of the fillet – no tail, no flap, no bones. Fillet steaks are thick cut which gives you the flexibility when it comes to cooking them. They work well when baked as the cod can retain the moisture and will yield lovely large flakes.

Almost always this cod is line-caught from Iceland, an MSC certified sustainable fishery. Iceland has made fantastic progress in the management of their fisheries since near collapse in the 1970s. Iceland has gone through multiple successful sustainability recertification processes. We use large mature cod for this cut.”
