Full Description
The rack of lamb is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack of lamb contains 8 ribs. This rack of lamb comes Frenched with the cap off. A classic cut, offering juicy morsels of meat clinging to the rib bone sometimes called “lolly pops”. The chine (feather bones) is removed to allow the rack to be cut into chops with a knife between the rib bones. Whether served formally or casually this rack of lamb cut is truly a treat. Frenching may take additional time depending on processor’s schedule. 100% grass fed lamb meat. Serves 4
Weight range before Frenching.
Large: 2.5 – 3.2 lb.
Medium: 1.8 – 2.4 lb.
Note: Frenching will remove a significant amount of fat weight.
