Lamb spleens are frequently called lamb melts and are common in North African cooking. Similar to liver but more mild. Organ meats are richer in vitamins and minerals than muscle meats and make a nutritious addition to diets. When preparing wash the spleen and remove the thin outer skin and fat. Cover with water and simmer until tender—2 or 3 hours. Let them cool in the broth. Cut into cubes and make into a stew or braise it. 100% Grass Fed.
